Job Summary
Oversee the preparation of all aspects of the pastry program, including breads, baked goods, confections, and desserts. Review, plan, and coordinate menus with other members of the culinary team. Complete food orders, inventory controls, and food rotations to minimize wastage. Ensure the regular cleaning and upkeep of the kitchen area and maintain all kitchen equipment and service tools. Respond to special requests and dietary needs in an attentive and effective manner. Perform radio duty, as required, to support field operations. This seasonal role involves an 11-hour split shift with a 2 weeks on/1 week off schedule, based in a remote lodge near Revelstoke, Golden, or Radium. Accommodation is provided at no extra cost. Candidates must hold a diploma or certificate in pastry, with a Red Seal Chef preferred, and bring 5+ years of culinary experience.
Required Qualifications
- Diploma or certificate in a pastry program
- Food Safe Certification
- 5 years of culinary experience with varied exposure
- 2+ years' experience in menu planning and execution
- Able to lift, carry, or otherwise move and position up to 50 pounds on an occasional basis
- Manual dexterity to operate a computer and other common office equipment on a constant basis
- This position is required, at times, to work on evenings, weekends, and holidays based on the needs of the business
- This position may require occasional travel to CMH areas, as well as some travel to industry functions on an occasional basis
- This position requires the flexibility and willingness to accept new responsibilities and potentially transfer others
Desired Qualifications
- Red Seal Chef, or equivalent
- Background in luxury hospitality or fine dining
- Proficiency in Microsoft Office and the ability to quickly learn other relevant software platforms
- The ability to prioritize tasks in a fast-paced environment with fluctuating seasonal workloads and changing priorities
- The confidence to interact with all levels of the company, including those in remote locations within a hub-and-spoke model
