Job Summary
Trainee Chef will participate in a structured 3-year culinary apprenticeship programme designed to develop technical skills, professional standards, and operational discipline within the Kitchen department. The role rotates through kitchen sections to gain progressive exposure to preparation, production, service support, hygiene, food safety, stock awareness, and section-specific standards. Primary responsibilities include cleaning, sanitising and mise en place, preparing ingredients under supervision (washing, peeling, chopping, portioning, seasoning), preparing salads, sauces and garnishes, supporting plating and service delivery under the direction of senior staff, maintaining hygiene and organisation, developing awareness of raw material quality and proper storage, following safety and lawful workplace directions, and carrying out additional tasks as directed by senior chefs. Emphasis on understanding food cost, portion control, stock rotation, spoilage, and waste reduction as part of professional kitchen development.
Required Qualifications
- Grade 12/Matric - National Senior Certificate
- Active participation in both academic and workplace learning
- Willingness to rotate across departments and shifts as required
- Openness to feedback and coaching
- Demonstration of professionalism, curiosity, and initiative
- Responsibility for own progress and timely completion of assignments and assessments
