Job Summary
Senior Sous Chef for sushi leads in a high-end Miami sushi kitchen, supporting the Head Sushi Chef and Executive Sushi Chef in prep, production, and presentation of maki, nigiri, and sashimi. Responsible for maintaining product standards, supervising junior staff, aiding in menu development, and ensuring HACCP-compliant cleanliness and food safety. Oversees order execution, training and mentoring of junior staff, station organization, inventory coordination, and participation in special projects and events.
Required Qualifications
- Formal sushi training or equivalent experience
- 2–3 years’ experience in sushi, preferably in a high-volume or fine-dining environment
- Strong understanding of sushi techniques, preparation, and presentation
- Ability to multitask, work under pressure, and meet deadlines
- Excellent communication and teamwork skills
- Flexibility to work varied shifts, including weekends and holidays
