Prepare all food items at the sushi station according to specifications, recipes, and pre-set time limits while maintaining proper pH for rice and documenting it. Coordinate delivery of foods within time standards and ensure hot food stays hot and cold food stays cold. Set up, maintain, and close stations by cleaning equipment, stocking items using the "first in, first out" method, and organizing walk-in coolers and storage areas. Respond to all callbacks and echoes to ensure ordered food is prepared on time. Communicate product runouts, equipment issues, and quality problems to the manager immediately. Maintain safety, sanitation, and personal grooming standards while welcoming guests according to company standards.
