Job Summary
As a Sushi Chef at Benihana, you will craft high-quality sushi and sashimi with precision, creativity, and consistency to deliver exceptional dishes and guest satisfaction. Responsibilities include preparing sushi, sashimi, and maki to Benihana’s standards; maintaining fish quality, cutting techniques, and proper storage; ensuring consistent knife cuts, portioning, and plating; adhering to food safety and HACCP guidelines; managing mise en place, rice cooking, and sauce production; keeping a clean, efficient sushi station; monitoring inventory; collaborating with BOH/FOH for a seamless dining experience; engaging with guests and offering sushi recommendations; and executing tasks with professionalism. Must be able to stand for extended periods and lift up to 50 lbs. Availability to work nights, weekends, and holidays. This role emphasizes expertise in sushi preparation, presentation, freshness, and team-driven hospitality in a fast-paced environment.
Required Qualifications
- Previous experience as a Sushi Chef or Sushi Cook in a high-volume restaurant
- Expertise in sushi preparation, knife skills, and traditional Japanese techniques
- Ability to multi-task and work efficiently in a fast-paced environment
- Strong attention to detail and commitment to presentation, freshness, and quality
- Understanding of sushi-grade fish handling, food safety, and storage practices
