Job Summary
Prepare and present sushi, sashimi, nigiri, maki rolls and other Japanese dishes to a consistently high standard. Ensure ingredients are fresh, properly stored and prepared in accordance with company standards. Manage daily mise en place and stock preparation for the sushi section. Maintain excellent food hygiene, food safety and HACCP standards. Ensure dishes are consistently prepared and presented in line with agreed recipes and standards. Monitor food quality, portion control and minimise waste. Support effective stock control and stock rotation. Maintain a clean, organised and fully stocked section at all times. Work collaboratively with the Head Chef and wider kitchen team to ensure smooth service. Assist with menu development and new dish ideas. Support and guide junior kitchen team and members where required. Work flexibly across the kitchen operation to support business needs. Minimum 3 years’ experience, strong knife skills, knowledge of sushi preparation, and ability to work under pressure in a fast-paced kitchen.
Required Qualifications
- Minimum 3 years’ experience as a Sushi Chef in a busy restaurant environment
- Strong knife skills and experience preparing and filleting fish
- Excellent knowledge of sushi, sashimi, nigiri, maki and Japanese food preparation
- Good understanding of food safety and hygiene regulations
- Ability work efficiently under pressure in a fast-paced kitchen
- Strong attention to detail and commitment to quality
- Strong team player with excellent communication skills
