Job Summary
Prepare traditional Japanese sushi rice, chop, slice, and fillet various fish, and place supply orders. Customize customer orders based on preferences and food allergies while maintaining high standards during busy periods. Inspect fruit, vegetables, and fish quality, informing the Executive Chef of sub-standard items. Prepare sushi dishes per established guidelines for quality, portion size, and presentation. Maintain a clean work environment to prevent contamination, regularly take inventory, and report equipment issues. Sterilize all utensils and equipment before use and communicate with wait staff regarding special requests. Work extended shifts including nights, holidays, and weekends under pressure.
Required Qualifications
- Proven experience working in upscale sushi restaurants
- Valid food handler's permit
- Sound knowledge of food safety regulations
- The ability to work under pressure
- The ability to stand for long periods of time
- Excellent time-management skills
- Exceptional customer service skills
- High school diploma or general education degree (GED)
- Culinary Degree from an approved school or a combination of schooling and work experience
- TIPS and ServeSafe certification
- At least 21 years of age
- One (1) year of experience in culinary management and administration
- Three (3) years of previous culinary experience
- Basic computer skills and competency in Microsoft Office including Word, Excel, and Outlook
- High attention to detail
- The ability to multitask in a fast-paced environment
- Must be able to stand on feet for extended periods of time
- Ability to lift 15lbs frequently
- Ability to lift 50lbs occasionally
- Must be able to work in hot and cold environments
- Must be willing to work various hours, nights, holidays and weekends when needed
- Must be authorized to work in the United States without sponsorship
Desired Qualifications
- Broad background from fast food to fine dining
- Previous experience using a POS software (Northstar)
- Must be able to work at any F&B outlet at Promontory when required
