Job Summary
Directly supervise 10 to 20 employees, interviewing, hiring, training, and addressing complaints. Manage kitchen operations by observing food preparation, instructing cooking personnel on fine points, and assuming responsibility in the absence of the Room Chef and Executive Chef. Order, stock, and inventory food products while updating recipes and costs of goods sold. Cook and carve meats, prepare sauces, and ensure all safety and sanitation regulations are met. Maintain valid WV racing license, Food Handlers permit, and TIPS certifications. Requires an associate's degree or equivalent experience and ability to lift up to 50 pounds.
Required Qualifications
- Associate's degree (A. A.) or equivalent from two-year College or technical school
- six months to one year related experience and/or training
- equivalent combination of education and experience
- Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals
- Ability to write routine reports and correspondence
- Ability to calculate figures and amounts such as discounts, interest, commissions, proportions, percentages, area, circumference, and volume
- Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form
- Ability to deal with problems involving several concrete variables in standardized situations
- Must qualify for licensing with the West Virginia Racing Commission
- Must be able to obtain proper Food Handler Certification
- Must adhere to food and beverage policies
- Must adhere to all safety and sanitation regulations
- Maintains valid WV racing license
