Job Summary
As Sous Chef at Amerant Bank Arena (Sanza Food Service), you will play a critical leadership role in day-to-day kitchen operations during high-volume events. Reporting to the Executive Sous Chef, you will oversee pre-event prep, service, and post-event breakdown across multiple food & beverage outlets; manage food production timelines; supervise and mentor line cooks and prep cooks; delegate tasks to maintain smooth workflow; enforce food safety and sanitation standards; participate in menu development and inventory management; and support cost-target achievement within budget. The ideal candidate brings 3–5 years of progressive culinary experience in large-scale venues, strong kitchen leadership abilities, and a commitment to quality, consistency, and teamwork in a fast-paced, event-driven environment.
Required Qualifications
- 3–5 years progressive culinary experience in high-volume venue
- Supervisory or lead cook experience
- ServSafe certification (or equivalent food handler)
- Ability to work flexible hours including nights, weekends, and holidays aligned with event schedules
- Excellent organizational and time management skills
- Strong communication and team leadership abilities
