Job Summary
The Sous Chef at Old Lahaina Luau supports and advises the innovative aspects of each special, event, and daily menu, maintaining the vision of the Hui and Executive Chef. Responsibilities include executing menus, specials, and events with top-tier culinary execution; leading and training the team to uphold quality and technique; identifying current and future food trends; ensuring adherence to company and Hui standards; collaborating with management to align restaurant goals; managing and updating recipe books; communicating with the Executive Chef and management; attending mandatory management meetings; creating and managing the team schedule; maintaining inventory and placing orders; training staff on food preparation, safe handling, and safety procedures; analyzing operational issues and suggesting improvements; and driving service quality, energy, and excellence across holidays, weekends, events, and peak periods. The role requires strong leadership, organizational, planning, and communication skills, a passion for great food and service, and a self-directed, collaborative approach to working with diverse teams.
