Job Summary
Oversees kitchen operations in the absence of the Executive Chef; prepares foods to the menu and standardized recipes; tastes and ensures quality and palatability; maintains sanitation and hygiene; supervises kitchen staff in the Executive Chef's absence; ensures recipes and standards are followed; collaborates on menu/recipe changes to optimize leftovers and stock. Requires the ability to read and write, communicate effectively in English, and meet scheduling requirements; expects experience in high-end institutional food service and proficiency with cooking techniques such as braising, roasting, stocks, and cold line preparation. The role emphasizes maintaining appearance and cleanliness, enforcing health standards, and performing additional duties as assigned.
Required Qualifications
- High School or GED equivalent required.
- Culinary degree or equivalent work experience preferred.
- At least (2) years of related experience and/or training in food production and/or restaurant services required.
- Experience in fine dining strongly preferred.
