Job Summary
Oversee production of food for banquets, weddings, golf outings, and off-premise events while supporting the restaurant and bar menu. Develop menus, recipes, and purchase specifications; maintain high sanitation standards; manage kitchen staff certifications and labor costs; monitor stock to minimize waste and control costs; ensure all menu items are available 100% of the time; train staff on portion control and waste guidelines; coordinate with event meetings and support special requests; supervise daily prep, ordering, and inventory, and perform executive chef duties in the chef’s absence. Must have a high school diploma or GED and at least three years of Sous Chef experience, a Food Sanitation Certificate, CPR/AED certification (or obtain within 90 days), and a valid driver’s license; requires leadership experience managing at least eight staff members and strong knowledge of sauces, soups, butchering, roasting, frying, grilling, and related culinary skills.
Required Qualifications
- Must be a high school graduate or GED equivalent with at least three (3) years of experience in a Sous Chef position
- Must have or be in the process of obtaining a Food Sanitation Certificate and be at least 18 years of age or older
- Must have experience managing a staff of at least eight (8) or more for at least two (2) years
- Must have knowledge of sauces, soups, cold and butcher, roast, fry, grill, and basic solving, analytical, organizational, interpersonal, and written and verbal communication skills
- Must have and maintain a valid driver's license with acceptable driving record
- CPR/AED certified or obtain within 90 days of employment
- Illinois food sanitation certificate; and Basset certificate
