Job Summary
Oversee the entire back-of-house operation for the Signature Dining Restaurant under the Creative Culinary Director; motivate and direct staff to uphold standards; ensure compliance with Gaming Commission regulations and tribal policies; manage cost controls, inventories, and budgeting; drive menu item changes and collaborate on menu development to stay at industry cutting edge; mentor Seminole Tribe members for property leadership roles and partner with training to maintain ServSafe and safety compliance; address guest complaints promptly and uphold brand values across the operation.
Required Qualifications
- Two year culinary arts degree
- Minimum five years experience as a high end Sous Chef or restaurant Chef
- High volume wok experience
- Ability to analyze Food and Beverage data
- Proven ability to reduce food costs
- Strong administrative and computer skills
- Excellent verbal and written communication
- Ability to lead and develop a cohesive culinary team
- Ability to interface effectively with FOH staff to enhance guest experience
