Job Summary
Trim raw material to desired specifications and yield targets using sharp knives and tools while maintaining strict cleanliness standards. Inspect and remove defects, bruises, or blemishes, then separate meats and by-products into specified containers and seal them as needed. Weigh product and tag containers for weight and contents, ensuring accurate portioning with good yields that meet customer specs. Collaborate with supervisors and production managers to schedule production, perform quality control checks, and communicate regarding any defects. Adhere to all Quality Assurance, HACCP, SQF requirements, and Occupational Health and safety regulations, including maintaining hygiene of the work area and equipment.
Required Qualifications
- High School / Equivalent
- Ability to work a flexible schedule according to seasonal demands
- You are required to provide your most recent employment experience for your application to be considered complete
- Must have a working knowledge of production equipment
- Demonstrated ability to portion all seafood products accurately and timely
- Ability to reduce processing costs by cutting and sizing portions accurately with good yields and meeting customer specs
- Ability to problem solve in terms of trimming and product substitutions
- Ability to work in a fast-paced, high-pressure, challenging environment
- Must be a team player and possess a positive attitude
- Ability to effectively communicate, both written and verbally, in English
- Follows company's Quality Control procedures
- A fish cutter must follow and maintain all Quality Assurance, HACCP, SQF requirements, and Occupational Health and safety regulations
- Maintaining cleanliness and hygiene of the work area and the cutting knives and equipment
- Ability to work Sunday, 1:00 PM - 9:30 PM
- Ability to work Monday - Thursday, 3:00 PM - 11:30 PM
