Job Summary
Lead Kitchen at Sky Bistro in Banff within Pursuit’s mountain-destination dining experience. The role combines culinary leadership with menu development and high-volume service management, focusing on crafting modern mountain cuisine inspired by local ingredients, mentoring a high-performing kitchen team, and upholding HACCP, quality, and cost-control standards. You’ll drive seasonal menu development, collaborate with Food and Beverage leadership on activations and events, supervise disciplined prep and production, and ensure professional, efficient service in a luxury, destination setting high in the Canadian Rockies.
Required Qualifications
- Minimum 8 years of progressive culinary leadership experience
- At least 3 years in a Head Chef or senior management role
- Formal culinary certification or equivalent international qualification (Red Seal asset)
- Demonstrated success managing high-volume, fast-paced dining operations
- Proven track record in menu development, recipe engineering, and cost control
- In-depth knowledge of food safety, sanitation, and workplace safety standards
- Excellent leadership, communication, and interpersonal skills
- Proficiency in scheduling, ordering, and inventory management systems
- Ability to thrive in a mountaintop operation with unique logistical challenges
- Strong organizational and time-management skills
- Computer literacy with hospitality systems (recipe costing, scheduling software, etc.)
- Must hold a valid Canadian work visa or be legally eligible to work in Canada
