Job Summary
Lead the daily operation of the restaurant, bar, lounges, terrace, and private dining areas by being fully hands-on during service and supporting the team on the floor. Manage, coach, and inspire the food and beverage team while organizing staff rotas to ensure appropriate staffing levels. Oversee afternoon tea, weddings, private dining, and corporate events, maintaining excellent communication with the kitchen to ensure smooth service. Monitor stock levels, complete stock takes, and control beverage costs while maximizing sales through effective upselling and team training. Handle guest feedback professionally and resolve issues promptly, ensuring all service standards and compliance with food safety and licensing regulations are met.
Required Qualifications
- previous experience managing a restaurant and bar within a quality hotel or fine dining environment
- Is a confident leader who enjoys motivating and developing a team
- Leads by example and isn't afraid to roll up their sleeves during busy services
- Has excellent food, wine, cocktail, and beverage knowledge
- Is passionate about delivering outstanding hospitality
- Is highly organised and able to manage multiple priorities
- Has excellent communication and problem-solving skills
- Is flexible and willing to work evenings, weekends, and holidays as required
