Job Summary

Conduct individualized nutrition consultations for students with medically necessary diets, food allergies, and lifestyle-based needs while serving as the primary contact for special dietary accommodations. Partner with culinary teams and campus stakeholders to analyze menus, manage allergen protocols, and develop training programs on food safety and nutrition awareness. Lead quality improvement initiatives, oversee nutrition technology platforms, and design educational campaigns promoting healthy eating habits across the University of Kansas community. Travel between multiple dining locations to verify compliance with food handling standards and support food security efforts.

Required Qualifications

  • Bachelor's degree in Dietetics, Nutrition, Food and Nutrition, or a related field from an accredited program
  • Master's degree in Nutrition, Dietetics, Public Health, or a related field
  • Registered Dietitian (RD) or Registered Dietitian Nutritionist (RDN) credential
  • Ability to maintain current licensure as a Licensed Dietitian in the State of Kansas, or ability to obtain licensure within 90 days of hire
  • One to three years of professional experience in clinical nutrition, campus dining, foodservice, or a related setting
  • Knowledge of nutrition principles, food allergies, allergen management, and special dietary accommodations
  • Knowledge of food safety, sanitation, and HACCP principles
  • Ability to interpret and apply nutrition regulations, standards, and best practices
  • Demonstrated cultural competency and the ability to provide inclusive nutrition guidance to a diverse campus population
  • Excellent interpersonal, communication, and customer service skills with a hospitality-focused approach
  • Proficiency with Microsoft Office and experience using menu management or nutrition analysis software
  • Ability to develop and deliver effective training programs to diverse audiences
  • Ability to prioritize multiple projects while working independently and collaboratively
  • Commitment to ongoing professional development and staying current with nutrition science and food safety practices
  • ServSafe Certification or ability to obtain certification within six months of hire
  • Ability to stand and walk for extended periods while conducting dining hall inspections, trainings, and campus events
  • Ability to lift, carry, push, and/or pull up to 25 pounds
  • Ability to bend, reach, stoop, climb stairs, and perform repetitive movements
  • Ability to travel between multiple campus dining locations
  • Ability to use a computer and standard office equipment for extended periods
  • Occasional evening and weekend work

Desired Qualifications

  • Experience using CBORD, NetNutrition, Illumia, or similar nutrition analysis systems
  • Experience working in higher education, collegiate dining, healthcare foodservice, or large-scale foodservice operations
  • Experience developing nutrition education, wellness programming, or public health initiatives
  • Strong organizational and project management skills
  • Demonstrated creativity and innovation in developing nutrition programs and student engagement initiatives
