Job Summary
Prepare and support breakfast, lunch, and dinner daily for up to 10 U.S. Marine Security Guards at the Marine Security Guard Residence in Kuala Lumpur, Malaysia. Develop and maintain a 14-day rotating menu cycle featuring American, local, regional, and international selections while ensuring at least one healthy meal option is available. Manage food storage, inventory, and purchasing activities, strictly adhering to HACCP principles and FDA, USDA, and Codex Alimentarius standards for food safety and sanitation. Maintain clean kitchen and dining areas, wash equipment, and accommodate dietary, cultural, and religious restrictions. Provide professional service and support meal headcount tracking and reporting. This role requires dependable daily coverage including weekends and holidays as part of a 12-month base contract with up to four one-year option periods.
Required Qualifications
- Minimum of 3 years of experience managing food service operations
- Demonstrated experience providing high-quality or premium-level food preparation and service
- Experience preparing a variety of meals and managing daily kitchen operations
- Capability of developing and executing rotating menus
- Understanding of proper food handling, sanitation, storage, and kitchen safety practices
- Ability to prepare nutritionally balanced meals and accommodate dietary, cultural, religious, and vegetarian needs
- Ability to maintain accurate food storage and inventory practices
- Professional appearance and appropriate food-service attire
- Ability to comply with required background screening and facility access procedures
- Ability to follow applicable food safety requirements, including HACCP-related practices and applicable FDA, USDA, and Codex Alimentarius standards
- Dependability and availability to support daily meal operations, including weekends and holidays
- At least three years of food-service management experience
