Job Summary
Pastry Cook prepares and plates SUZU's dessert and pastry program — Japanese-inspired desserts, mochi, seasonal confections, and accompaniments — under the direction of the culinary leadership. This role emphasizes precision, consistency, and artistry of the sweet side of the menu, requiring detail-orientation, creativity, and proficiency with recipes and plating to meet fine-dining standards. Responsibilities include producing desserts to specification for à la carte, omakase, and seasonal menus; recipe development support; meticulous plating and presentation; efficient station setup, labeling, rotation, FIFO control, and inventory with leadership; exact execution of recipes, ratios, and timing; maintaining sanitation, food safety, and Ohio regulations; and opportunity for growth into leadership roles.
Required Qualifications
- 1–3 years of pastry or baking experience (restaurant or fine dining preferred)
- Strong fundamentals in pastry techniques, ratios, and plating
- Attention to detail, consistency, and creativity
- ServSafe / food-handler certification (or ability to obtain)
- Ability to perform under pressure in a fast-paced kitchen
- Interest in Japanese flavors, ingredients, and dessert traditions
