Job Summary
Scratch-bake artisanal yeast breads, laminated doughs, choux pastries, soufflés, custards, and custom desserts while maintaining strict food safety and sanitation standards. Lead the bakery program by supervising a team of culinarians, training junior staff, and managing inventory and documentation to support financial goals. Prepare specialty items including cookies, cakes, pies, tarts, meringues, and fritters, ensuring all food meets quality benchmarks before service. Maintain positive relationships with residents and staff while participating in community engagement programs and resident satisfaction surveys. Perform kitchen inspections to avert potential problems and report hazardous conditions immediately.
Required Qualifications
- Minimum 5 years of experience in a high-volume food production environment
- Expert-level understanding of cooking techniques, menu plating, and ingredient management
- At least one year of experience managing and directing a pastry team
- Expert in flavor balance, texture pairing, menu presentation, and recipe scaling
- Thorough, working knowledge of health, safety, and sanitation regulations (including HACCP)
- Must be able to lift, work on your feet throughout shift, and bend, kneel, stoop, and reach
- Must be able to stand six to eight hours per day
- Able to operate kitchen equipment (including fire extinguisher)
- Must participate in resident satisfaction/engagement programs/activities, to meet or exceed benchmark goals in Employee Engagement and Resident Survey
Desired Qualifications
- Culinary degree or certificate from an accredited school
- ServSafe Certified
- Skilled in portion control, waste reduction, and inventory management
- ServSafe Certified with deep knowledge of health and sanitation standards
