Job Summary
Oversee the Bakery department by crafting cakes, pies, tarts, and bread components while coordinating with the Executive Chef on menu development, research, and recipe testing. Ensure timely production of baked goods that meet or exceed standards, including fulfilling special catering requests and developing new menu items based on public trends. Supervise a team of baking staff, ensuring all personnel are properly trained, certified, and compliant with health and safety guidelines through routine inspections and temperature log maintenance. Manage inventory levels using the FIFO method, order supplies based on attendance projections, and control costs, PAR levels, and budgets for the department.
Required Qualifications
- Bachelor's degree
- Bachelor's degree, preferably in culinary arts
- ServSafe Food - Manager level certification
- California Food Handler's Card
- 8-10 years of prior, work-related experience
- 3-5 years of prior leadership, supervisory experience
- Computer skills including knowledge of word processors, spreadsheets, and e-mail
- Food trak or inventory system
- Bread, pastry and cake production and development
- Ability to work nights, weekends and holiday periods to meet business needs
- Ability to pass a mandatory (or random) drug test, per Company policy, unless prohibited by state or provincial law
- Ability to pass a background check, if 18 years of age or older, which may include, but is not limited to, credit, criminal, DMV, previous employment, education and personal references, per Company policy, unless prohibited by federal, state, or provincial law
