Job Summary
Oversee daily operations of the All Day Dining outlet, ensuring seamless service delivery and adherence to Fairmont's luxury hospitality standards. Manage and supervise the dining team, including servers, kitchen staff, and support personnel, whilst fostering a positive and professional work environment. Develop and implement operational strategies to maximise revenue, optimise costs, and enhance profitability of the outlet. Ensure consistent delivery of exceptional culinary experiences and service quality in accordance with established standard operating procedures. Monitor food and beverage inventory, manage stock levels, and coordinate with procurement to maintain optimal supplies. Maintain rigorous health, safety, and hygiene standards, ensuring full compliance with local regulations and Fairmont policies. Conduct regular staff training and development programmes to enhance service excellence, product knowledge, and customer engagement skills. Analyse guest feedback and implement corrective measures to continuously improve service quality and guest satisfaction. Manage guest relations and handle complaints professionally, ensuring swift resolution and guest retention. Prepare and present regular performance reports, including financial analysis, occupancy rates, and operational metrics to senior management. Collaborate with the culinary team to develop innovative menus, seasonal offerings, and special dining experiences. Coordinate with other departments (housekeeping, front office, marketing) to ensure integrated guest experiences and cross-departmental support. Implement cost control measures, manage budgets effectively, and identify opportunities for operational efficiency improvements. Ensure the outlet maintains an inviting ambiance through proper maintenance of facilities, décor, and dining equipment.
Required Qualifications
- Minimum 7-8 years of experience in food and beverage management
- At least 3 years in a supervisory or management role within a luxury hospitality environment
- Proven track record of successfully managing full-service dining outlets with revenue responsibility
- Strong knowledge of food safety, hygiene standards, and compliance with local health and safety regulations
- Excellent leadership and people management skills with the ability to motivate and develop diverse teams
- Proficiency in financial management, budgeting, and P&L analysis
- Demonstrated expertise in guest relations and complaint resolution
- Fluency in English
- Proficiency in hospitality management systems and point-of-sale (POS) software
- Diploma or degree in Hotel Management, Hospitality Management, or Food and Beverage Management
- Experience working with luxury hotel brands or Michelin-starred establishments
- Experience in revenue management and yield optimisation strategies
- Demonstrated success in implementing operational efficiency improvements and cost control measures
- Strong organisational and time management skills with the ability to multitask in a fast-paced environment
- Excellent communication and interpersonal skills with a customer-centric approach
