Job Summary
Manage multi-site kitchens across The Lighterman, The Broadcaster, and rotating support for The Italian Greyhound and Boxcar, maintaining high food standards and consistent service during peak hours. Lead junior chefs through coaching and development while handling administrative tasks, rota management, and direct service support on tough nights. Balance hands-on kitchen operations with commercial responsibilities including wage management, dish costing, and supplier negotiations alongside the Executive Chef. Work evenings and weekends as required, adapting weekly focus between team development and operational oversight. Enjoy staff meals, dining discounts, and a holiday allowance of up to five days.
Required Qualifications
- Michelin or rosette-level training or experience

- A genuine love of food
- deep understanding of ingredients, flavour and technique
- confidence to teach and inspire junior chefs by leading from the front
- Creative, but grounded approach to developing dishes and systems
- track record in high-volume kitchens
