Job Summary
Lead and support the prep team by creating, organizing, and distributing detailed daily prep lists for restaurant and banquet operations. Monitor execution of these lists to ensure efficiency, consistency, and timeliness while guiding team members on proper techniques, recipes, and kitchen procedures. Prepare a variety of meats, seafood, poultry, vegetables, and other food items using broilers, ovens, grills, and fryers, strictly adhering to standardized recipe cards for portion control and quality. Maintain a clean and sanitary workstation, enforce food safety protocols, and report any product shortages or equipment issues immediately to the chef on duty. Complete opening and closing checklists while attending scheduled meetings to contribute ideas for continuous improvement.
Required Qualifications
- High school education or equivalent experience
- Previous prep cook experience in a high-volume kitchen
- Must be able to lift food cases and metros weighing up to 70 lbs
- Periodic climbing required
- Bending of the knees
- Full range of mobility and the ability to travel 30-50 feet on a regular basis
- Continuous standing
- Must be able to hear equipment timers and communicate with other staff
- Must be able to see that product is prepared appropriately
- Must be able to understand and follow verbal/written instructions and communicate both verbally and in writing
- Inside 100% of 8 hour shift
- Going in the freezer temperatures can be -10 degrees
- On the front line, temperatures can be over 100 degrees
