Job Summary
Lead Line Cook at Rock Creek Resort responsible for using specification sheets to prepare daily prep, maintaining par levels, and preparing new menu items under supervisor direction. Ensure attractive presentations for buffet and plated items, supervise line cooks to maintain quality, handle customer requests, set up and maintain prep areas, ensure sanitation and safe handling standards, conduct product inventories and assist with ordering/receiving, and oversee opening/closing kitchen procedures. Requires 5+ years in the industry with at least 2 years in a lead role, ability to cook proteins to specified temperatures, banquet experience up to 100 guests with a small team, state food handler licenses, knowledge of mother/minor sauces and butchering techniques, proficiency with kitchen equipment, knife skills, and flexibility to work weekends/holidays. Required Qualifications
- 5+ years in industry, at least two years as a lead
- Necessary State Food Handler’s License(s)
- Ability to cook proteins to pre-determined temperatures
- Ability to read and comprehend simple instructions, memos, and short correspondence; effectively present information in one-on-one and small group settings to other employees
- Working knowledge of all mother and minor sauces
- Working knowledge of proper butchering techniques
- Knowledge of equipment: slicer, Robo-coup, Hobart, convection ovens
- Must possess knife skills and ability to adjust preparations for flavor and customer needs in a timely manner
- Weekend, Holidays and early mornings required
