Job Summary
Lead baking operations for high-volume breads, desserts, and pastries at McMurdo Station, functioning as shift leader when Sous Chef is absent. Prepare all assigned menu items for primary and satellite locations using standardized and high-volume recipes while ensuring quality taste and presentation. Maintain strict sanitation standards across cold and hot storage areas, service zones, and equipment, adhering to all Safety and Environmental Health & Safety protocols. Manage food labeling, dating, and leftovers, and coordinate with Stewards for pot transfers. Work up to 12 hours daily in a physically challenging environment, supporting Infrastructure and Operations Division metrics and ASC contractual goals. Requires current ServSafe certification, valid driver's license, U.S. citizenship, and Tier 1 Background Investigation clearance.
Required Qualifications
- High school education or GED
- Current ServSafe Food Handler certificate
- Valid driver's license
- Valid U.S. Passport
- US citizenship or permanent residency
- Tier 1 - Elevated Background Investigation (EBI) result
- Minimum two years baking wide varieties of products in a commercial setting
- Ability to stand for up to 12 hours daily
- Ability to lift up to the safety regulation maximum
- Ability to agree with and adhere to Standard Operating Procedures and tasking responsibilities
- Ability to comply with all standards of safety and sanitation in the kitchen and service areas
- Ability to work in a team unit composed of diverse personalities
- Ability to display self-motivation in physically challenging and atypical working environments
- Ability to maintain flexibility and a positive attitude in a dynamic, fast-paced environment
- Ability to perform duties in support of Infrastructure and Operations Division metrics
- Ability to support the achievement of ASC metrics
- Ability to comply with all ASC Environmental Health & Safety, and Quality Assurance, requirements and goals
- Ability to provide documentation to divisions as necessary to ensure adequate and legal documentation
- Ability to work to achieve ASC goals and contractual commitments
- Ability to function as shift leader in the absence of the Sous Chef (Bakery)
- Ability to prepare all assigned menu items for primary and satellite locations utilizing proper baking techniques
- Ability to ensure quality of the food's taste and presentation
- Ability to perform proper labeling and dating of food
- Ability to efficiently utilize leftovers
- Ability to develop high-volume recipes as needed
- Ability to maintain sanitation standards of work areas, cold and hot storage areas and service areas
- Ability to perform proper use and timely cleaning of equipment and tools
- Ability to ensure timely transfer and scraping of dirty pots to pot-washing area
- Ability to display leadership abilities
- Ability to demonstrate good communication and organizational skills
- Ability to maintain a safe workplace program
- Ability to ensure safety is the highest priority in the work place
