Job Summary

Conduct weekly environmental swabbing for Listeria control, pre-operational testing, and air monitoring. Perform finished product testing and quarterly USDA pathogen sample submissions. Calibrate and clean all lab equipment daily, then read and record chemistry results while reporting any out-of-spec deviations to management. Execute required raw material testing and Gold Standard chemistries, maintaining relevant data spreadsheets. Monitor HACCP critical control points and complete monthly safety and SQF trainings. Follow GMPs, SOPs, and SSOPs while maintaining a safe, organized work area.

Required Qualifications

  • High school diploma or general education degree (GED)
  • 6 months+ of relevant manufacturing experience
  • Ability to read and interpret documents such as safety rules, operating and/or maintenance instructions and procedure manuals
  • Ability to write routine reports and correspondence
  • Basic verbal and written communication skills in English
  • Ability to add and subtract two digit numbers
  • Ability to carry out instructions furnished in written, oral, or diagram form
  • Ability to deal with problems involving few concrete variables in standardized situations
  • Excellent verbal and written communication skills
  • Must be able to stand
  • Must be able to walk
  • Must be able to use hands to finger, handle, or feel
  • Must be able to lift and/or move up to 25 pounds

  • Must be able to follow Good Manufacturing Practices (GMPs)
  • Must be able to follow Hazard Analysis and Critical Control Point (HACCP) training
  • Must be able to follow company pre-requisite programs
  • Must be able to follow Standard Operating Procedures (SOP's)
  • Must be able to follow Standard Sanitation Operating Procedures (SSOP's)
  • Must be able to maintain the LCOP (Listeria Control Program)
  • Must be able to maintain the Pre-Operational environmental swabbing and testing program
  • Must be able to maintain the environmental air monitoring program
  • Must be able to implement Micro Corrective Action
  • Must be able to complete testing on all finished product
  • Must be able to maintain the QPT (Quarterly USDA Pathogen Testing Program)
  • Must be able to complete validation, calibration, temperature monitoring, and cleaning of all Micro Lab equipment
  • Must be able to perform required testing of materials/raw materials
  • Must be able to read, record, and enter all chemistry results
  • Must be able to inform management of any high results that are outside the acceptable spec range
  • Must be able to clean all lab equipment, and surfaces
  • Must be able to calibrate all lab equipment daily
  • Must be able to inform management of any results that are outside of specifications
  • Must be able to perform data entry to software tool
  • Must be able to conduct Gold Standard chemistries
  • Must be able to perform pre-op inspection
  • Must be able to monitor all the CCP's (smokehouse cooking schedule) associated with the HACCP program
  • Must be able to advise management on any scientific validation issues
  • Must be able to work effectively with all levels of management and employees

Desired Qualifications

  • Knowledge and experience in Quality Systems and production
  • Prior knowledge of food processing equipment
  • Knowledge of SAP
  • Ability to calibrate delicate instruments
  • Ability to take accurate readings on fine gauges
  • Basic knowledge of supply chain
  • Basic knowledge of purchasing materials
  • Basic knowledge of manufacturing
