Job Summary
Kitchen Supervisor role overseeing kitchen staff and assisting chefs in daily operations. Responsible for preparing, seasoning, and cooking soups, meats, vegetables, desserts, and other items for hotel dining outlets; ensuring breakfast items, room service, Club Room, and dinner buffet items meet standards and are served on time; training new hires and junior cooks; maintaining sanitation through daily temperature logs and monthly audits; labeling and storing leftovers; upholding Clean as You Go and sanitation policies; coordinating with servers to fulfill ticketed orders and guest requests; supporting station setup/breakdown and selecting appropriate cooking methods for various products; and maintaining knowledge of sanitation codes, knife skills, and sauces. Requires ability to work cold or hot stations, adapt to time-sensitive banquet or a la carte service, and communicate effectively with guests and staff. PM/evening availability is required. Certification in food safety (Serve Safe) is highly desired.
Required Qualifications
- Strong banquet food preparation skills and previous experience in upscale banquet food preparation operations
- People skills: needs to understand and be able to execute praising, coaching & counseling procedures in a professional and effective manner
- Knowledge of knife skills, sanitation and cooking methods; able to apply in food production
- Previous line cook experience in an a la carte restaurant required
- Knowledge of sanitation codes concerning food storage, cross contamination, food safety and danger zones
- Knowledge of proper cooking methods (roasting, sautéing, frying, braising)
- Good sauce knowledge (stocks, mother sauces)
- Ability to work either cold or hot station in an a la carte or banquet environment
- Ability to set up and break down a station or banquet function under time constraints
- Ability to identify food products and apply appropriate cooking methods
- Language skills to read recipes and safety rules, write basic reports, speak with customers or employees
- Mathematical skills to perform basic calculations
- Reasoning ability to solve practical problems and interpret diverse instructions
- FOOD SAFETY (Serve Safe) training certification highly desired
- PM/evening availability
