Job Summary
Prepare nutritional meals by cooking, serving food, and testing for proper donation and seasoning. Coordinate activities with other cooks and inmate trustees to ensure meals are ready at scheduled times. Maintain kitchen and dining areas by sanitizing dishes, equipment, and work surfaces while storing deliveries properly to prevent spoilage. Evaluate cooking methods to minimize waste and inform supervisors of operational problems. Work rotating shifts, weekends, and holidays in hot, humid conditions using standard kitchen equipment.
Required Qualifications
- Methods and procedures regarding food preservation; kitchen and dining area sanitation; use and care of equipment and utensils used in food preparation
- Basic math skills
- Relevant computer hardware and software applications
- Speak, read and write the English language
- Communicate effectively verbally and in writing
- Understand and follow written and oral instructions
- Prepare food in quantities
- Comply with laws and regulations governing food preparation in institutions
- Handle stressful situations in a professional manner, including angry or difficult customers
- Establish and maintain effective working relationships
- Prepare quantities of food required with a minimum of waste
- Maintain kitchen, dining areas, kitchen utensils and equipment in a sanitary manner
- Maintain working relationships with inmates and staff
- Understand and practice safety procedures and precautions
- Maintain confidentiality
- Walk, sit, climb, balance, stoop, kneel, crouch or crawl, taste and smell
- Use hands to finger, handle, feel or operate objects, tools or controls
- Lift and/or move up to 50 pounds
- Lift and/or move up to 100 pounds
- Close vision, color vision, depth perception and the ability to adjust focus
- Stand for long periods of time
- Work outside normal business hours, including and/or rotating shifts, weekends and holidays
