Job Summary
Manage restaurant operations to maintain high standards of food, beverage, service, and marketing while maximizing profitability through cost controls and budget monitoring. Interview, train, and supervise staff; organize pre-shift meetings to communicate house counts, menu changes, and work assignments. Monitor kitchen and facility areas to ensure food quality and service standards, verifying temperatures, appearance, and preparation methods. Utilize computer systems to charge guests, create revenue reports, and draft correspondence, while regularly evaluating guest satisfaction to implement new policies and resolve complaints. Ensure compliance with all local, state, and federal laws and regulations regarding cleanliness and sanitation. Participate in menu development, marketing initiatives, and the annual budget process, while attending mandatory divisional and departmental meetings.
Required Qualifications
- High School graduate or equivalent
- Experience with supervision of associates
- Food Service Sanitation certification
- Alcohol Service permit (if state required)
- Ability to communicate in English, both orally and in writing
- Ability to work under pressure and deal with stressful situations during busy periods
- Ability to access and accurately input information using a moderately complex computer system
- Thorough knowledge of restaurant operations including foods, beverages, supervisory aspects, service techniques, and guest interaction
- Considerable skill in math [and algebraic equations?] using percentages
- Interpersonal skills to provide overall guest satisfaction
- Regular attendance in conformance with the standards
Desired Qualifications
- Four year college degree
- At least 1-3 years of experience in related field
- Hotel restaurant management experience
- CPR certification
- Ability to effectively lead and coach others
- Ability to effectively manage and direct restaurant staff
- Ability to effectively organize and conduct pre-shift and department meetings
- Ability to effectively schedule and direct staff in work assignments
- Ability to effectively maximize restaurant department profitability
- Ability to effectively implement effective controls of food, beverage, and labor costs

- Ability to effectively ensure par stock levels are maintained
- Ability to effectively evaluate cost effectiveness of all aspects of operation

- Ability to effectively create forecast and revenue reports
- Ability to effectively draft correspondence
- Ability to effectively input and retrieve data
- Ability to effectively change computer procedures and programs
- Ability to effectively move throughout facility and kitchen areas
- Ability to effectively visually monitor and take corrective action

- Ability to effectively participate in the development of the annual budget for the restaurant
- Ability to effectively develop short and long term financial operating plans
- Ability to effectively utilize traditional software programs such as Word, Excel, Publisher, PowerPoint and/or Outlook Express
- Ability to effectively perform in the capacity of any position supervised

- Ability to effectively demonstrate working knowledge of the service standards
