Job Summary
Hygiene Manager responsible for food safety, sanitation, and hygiene across hotel operations with a focus on F&B outlets, kitchens, storage, and back-of-house spaces. Oversees the Stewarding Team, ensures adherence to HACCP-based FSMS, complies with South African health regulations and Marriott/EDITION brand standards, conducts hygiene audits, maintains documentation (temperature logs, cleaning schedules, pest control), leads corrective actions, collaborates with suppliers on safety standards, and trains associates in hygiene practices while promoting accountability and operational excellence.
Required Qualifications
- Diploma or Degree in Food Technology, Environmental Health, Hospitality Management, or related field
- Minimum 3–5 years’ experience in a hygiene, food safety, or stewarding management role within a hotel or large-scale hospitality environment
- Strong knowledge of HACCP and food safety regulations in South Africa
- Experience managing teams, preferably stewarding or back-of-house operations
- Proficient in audit processes, compliance management, and reporting
- Strong leadership, organizational, and communication skills
