Job Summary
Head Pastry Chef to lead pastry operations across restaurant, banquets, and events at Pullman Cairns International; design and execute innovative dessert menus, ensure five-star quality in presentation and execution, manage ordering, stock control and food cost within the pastry section, and mentor/develop the pastry team while maintaining HACCP standards and collaborating with the wider culinary team. Requires senior pastry experience in a hotel/high-volume kitchen, leadership and team-development skills, experience across both à la carte and large-scale banqueting service, strong organisational/time management abilities, and flexibility to rotate rosters including evenings, weekends, and public holidays.
Required Qualifications
- Trade qualifications in Commercial Cookery or Patisserie
