Job Summary
Run the coal grill during service, managing live fire, temperature, timing, and char while cooking proteins and vegetables to exact standards. Execute full pre-shift prep and mise en place, maintain food and fire safety protocols, and communicate timing clearly with the pass and line. Keep the station clean, organized, and stocked throughout shifts, then handle complete breakdown, ash management, and closing procedures. Requires 1+ year professional cooking experience with live-fire skills, valid Illinois Food Handler certification, and availability for evenings, weekends, and holidays.
