Job Summary
Prepare and present cold kitchen items including composed salads, fresh-cut fruits, appetizers, sandwiches, and deli platters in accordance with standardized recipes and portion control. Assemble salad bars, sandwich stations, and cold buffets while ensuring proper temperature, HACCP log maintenance, and FIFO stock rotation. Slice and portion meats, cheeses, fruits, and vegetables; adjust production volumes for fluctuating camp populations and special dietary requests. Maintain sanitation of workstations and equipment while collaborating with culinary teams during peak service periods and catering events. Monitor inventory levels and assist with deliveries in a high-volume, remote camp environment requiring 12-hour shifts.
Required Qualifications
- High school diploma or equivalent
- Minimum 2 years of experience in Garde manger, deli, or cold kitchen preparation
- Demonstrated knowledge of HACCP, cold-holding requirements, and allergen management
- Food Safe, WHMIS, and First Aid certifications
- Must pass pre-employment and pre-access drug and alcohol and FIT testing
- Must be able to stand and walk for extended periods during 12-hour shifts
- Must be able to lift, carry, push, or pull up to 35–50 lbs
- Must be able to perform repetitive tasks including chopping, stirring, and lifting
- Must be able to work in hot kitchen environments and cold storage areas
- Must be able to bend, squat, kneel, and reach regularly
- Must be able to adapt to long hours and physically demanding schedules in a remote camp setting
- Attention to detail in cold food presentation and portioning
- Strong knife skills and proficiency in cold food preparation
- Ability to work independently and as part of a team
- Commitment to food safety and sanitation
- Teamwork, communication, and adaptability in remote camp conditions
- Cultural awareness and ability to work respectfully with Indigenous and Inuit colleagues and communities
- Must be available for fly-in/fly-out travel from Edmonton, Alberta or Yellowknife, Northwest Territories, to the project site in Nunavut
- Must be able to work nights, weekdays, weekends, and general holidays
Desired Qualifications
- Culinary or Hospitality post-secondary education
- Experience in sandwich/deli, catering, or camp kitchens in high-volume settings
- Previous experience in remote camps, hotels, or large-scale catering
