Job Summary
Oversee all food preparation for a shift in a dining facility, planning high-volume meals for the day and week while maintaining quality, safety, and sanitation standards per HACCP and NYS Department of Health guidelines. Direct staff assignments, train student workers, and manage communication with the chef manager regarding pars, recipes, and production progress. Maintain production and usage records, check food quantity and quality, and perform general cleaning, stocking, and recordkeeping. Demonstrate excellent customer service in a fast-paced team environment while adhering to BASC policies and obtaining ServSafe certification within 12 months. Requires minimum five years of high-volume professional cooking experience, including knife skills and various cooking techniques.
Required Qualifications
- Minimum 5 years high-volume professional cooking experience
- Must have, or obtain (within 12 months of hire) ServSafe Certification
- Must be able to lift/move 30 lbs. on a regular basis
- Able to read and write English
- Possess basic math skills
- Proficiency in professional knife-handling skills with ability to cut/trim various meats/poultry/fish
- Thickening techniques, soup and sauce classification and production
- Sauté, stir fry, pan frying, deep frying, grilling, broiling, roasting, steaming, braising and stewing
- Cold food production
- Food presentation and garnishing standards
Desired Qualifications
- High School/GED
- A two-year degree from an accredited institute or community college in a related area
