Job Summary
Prepare and execute menu items according to standardized recipes, portion controls, and presentation standards, with a focus on sushi preparation including nigiri, sashimi, maki, and specialty rolls. Utilize expertise in sushi rice, seafood, vegetables, sauces, and garnishes while maintaining the highest standards of freshness and food safety. Demonstrate proper fish handling, knife skills, and preparation techniques for raw seafood and sushi ingredients. Work across multiple kitchen stations, including grill, sauté, pantry, and garde manger, as business needs require. Ensure all food is prepared, plated, and presented to the Club's culinary standards while maintaining a clean, organized, and sanitary workstation. Collaborate with chefs and fellow culinary team members to ensure efficient, high-quality service. Assist with inventory, receiving deliveries, and proper product rotation (FIFO). Support banquet, à la carte, and special event operations as needed.
Required Qualifications
- Minimum of two (2) years of experience as a line cook in a high-volume restaurant, hotel, country club, or upscale dining environment
- Demonstrated experience preparing sushi, including sushi rice, nigiri, sashimi, maki rolls, and specialty rolls
- Strong knife skills and knowledge of fish fabrication, seafood handling, and sushi preparation techniques
- Understanding of food safety, sanitation, and proper handling of raw seafood
- Ability to work efficiently across multiple kitchen stations in a fast-paced, team-oriented environment
- Strong attention to detail and commitment to consistency, presentation, and quality
- A positive attitude, strong work ethic, and passion for culinary excellence
- Flexible availability, including evenings, weekends, holidays, and special events
- Ability to stand and walk for 8–10 hours per shift
- Ability to lift and carry up to 50 pounds
- Frequent bending, reaching, stooping, twisting, and repetitive motion
- Ability to work in hot, fast-paced kitchen environments
- Manual dexterity and coordination required for knife work and food preparation
- Background check required
Desired Qualifications
- Experience in upscale dining, private clubs, or resort-style operations is strongly preferred
- ServSafe Food Handler Certification preferred or obtained within 30 days of hire
