Job Summary
Directs planning, coordination, and operation of a food service department in a state hospital/institutional setting. Responsibilities include coordinating purchasing, menu planning, diet interpretation and nutritional plans, requisitioning food, supplies and equipment; maintaining sanitation standards; preparing staff work schedules; reviewing menus and interpreting recipes and modified diets; conducting staff meetings; monitoring food costs and budgets; and ensuring proper storage, inventory and serving of meals while supervising assigned staff (which may include inmates or patients).
Required Qualifications
- Associate’s degree in culinary arts, food management or a similar field
- one year of supervisory experience or supervising inmates in a commercial or institutional food service environment
