Job Summary
Direct overall operations and staff of the Food & Beverage department, developing and managing operational goals to meet profit objectives and staffing targets. Prepare, monitor, and adhere to budgets while ensuring regulatory compliance and reporting deviations to the Director. Assist in directing all Food & Beverage and Casino Beverage operations, including menu design, inventory audits, and cost control systems. Manage staff development, training programs, and performance evaluations, while determining staffing recommendations and scheduling to meet business needs. Work all shifts including holidays, nights, weekends, and overtime as dictated by business requirements.
Required Qualifications
- Bachelor's degree (B.A./B.S.) from an accredited four year college or university or equivalent
- four to eight years of Food and Beverage leadership experience
- combined education and experience
- Minimum of four years of previous F&B experience at manager level or higher
- ability to interact with guests, staff, and colleagues and resolve problems and conflicts in a diplomatic and tactful manner
- proficiency in all Microsoft Office applications
- knowledge in all Food and Beverage software systems
- ability to train and motivate team
- ability to think strategically and operationally about factors such as: pricing, quality, marketing, price/value perceptions, customer satisfaction, and employee training and development as they relate to overall Food and Beverage products
- Delegation, negotiation, and diplomacy skills
- Flexible to work all shifts including holidays, nights, weekends, and overtime as business needs dictate
- Excellent motivational, communication, and customer service skills
- Well-developed guest and employee relations skills
- extensive knowledge of food cost and labor analysis
- Knowledge of all phases of Food and Beverage administration, cost control, and familiarity of all food and beverage services
- Employee must be able to qualify for licenses and permits required by federal, state, and local regulations
- Must successfully complete C.A.R.E or TiPS training
- Must possess a valid driver's license and have acceptable driving history as determined by Penn Entertainment's auto insurance carrier
- Must regularly lift and/or move up to 10 pounds
- Must frequently lift and/or move up to 25 pounds
- Must occasionally lift and/or move up to 50 pounds
- Must have the ability to push, pull, reach, bend, twist, stoop, stack, crouch, kneel and balance when performing job duties in varying work areas such as confined spaces
- Ability to read and interpret documents in English, such as safety rules, operating and maintenance instructions, and procedure manuals
- Ability to read and communicate verbally in English
- Written communication skills in in English
- Ability to apply commonsense understanding to carry out instructions furnished in written, oral, or diagram form
- Ability to deal with problems involving several concrete variables in standardized situations
