Job Summary

Lead FIFO/DIDO kitchen operations as Head Chef across multiple villages, collaborating with Village & Catering Managers to deliver exceptional food and guest experience. Oversee a smooth, profitable kitchen operation with 5+ years of cumulative chef experience in large hotel or remote village environments, including supervising and managing a team of chefs. Manage ordering, storing, preparing and delivering food service in bulk/batch cooking settings; ensure HACCP compliance, budgetary control, wastage reporting, and client relationship support. Rostering and scheduling responsibilities, with opportunities for cross-site exposure and ongoing training and development. Role may be DIDO from Brisbane or FIFO from Queensland locations; accommodation and meals provided onsite where applicable; drivers’ license (Class C) preferred. Sponsorship not available; valid working rights in Australia for the next 12 months required.

Required Qualifications

  • Certificate III/IV in Commercial Cookery or Trade certificate essential
  • Experience with ordering, storing, preparing and delivering food service
  • Strong experience in a bulk/batch cooking environment
  • Applied knowledge of HACCP principles in a bulk cooking environment
  • Ability to create service schedules on a daily, weekly and monthly basis
  • Applied knowledge of workplace safety systems and compliance requirements
  • Budgetary and analytical skills
  • Valid drivers’ licence (Class C) is preferred
