Job Summary
Prepare and cook all menu items according to recipes and standards while maintaining a clean, safe work area and ensuring the kitchen is stocked. Execute proper receiving, thawing, storage, and sanitation procedures for all food products, including sauces, soups, and produce. Prep vegetables, meats, and seafood; fry, sauté, roast, and boil ingredients to create quality finished dishes. Set up, maintain, and break down cook stations; carry pans, kettles, and trays between workstations. Clean work areas, equipment, and utensils; sweep, mop, and steam-clean garbage containers. Assist with dishes and pots/pans when stewards are absent. Attend required meetings and complete all training. Maintain confidentiality and uphold the Odawa Casino Mission statement. Work part-time with flexibility for shifts, weekends, and holidays.
Required Qualifications
- Minimum of one (1) year experience in the service industry.
- Must have basic math skills.
- Must read, write, and speak English fluently.
- Must have knowledge of proper use of all kitchen equipment used in prep procedures.
- Must know the importance and demonstrate use of rotation (First In First Out—FIFO) system.
- Must have knowledge of compound dressings, sauces, and salads.
- Must have proper knowledge of fresh meat, poultry and seafood handling and proper meat roasting procedures.
- Must be able to stand for extended periods of time, bend, stoop, reach, push and pull.
- Exposure to loud and continual noise levels and a smoke-filled environment.
- Must be flexible with shift and days off with the ability to work overtime, weekends, holidays, and special events, etc., as needed.
- Must be able to obtain a gaming license in accordance with the regulations established by the LTBB Gaming Regulatory Commission and be able to serve in the position under any other applicable law.
