Job Summary
Coordinate and monitor all phases of kitchen operations, food production, and loss prevention while overseeing daily activities including sanitation, inventory logs, and food cost reporting. Supervise and direct all staff, conduct performance reviews, and provide training on quality standards, portion control, recipes, and sanitation compliance. Work with the Executive Chef to create menus, manage par stock levels, and enforce local health department laws and corporate SOPs. Respond to guest complaints, review and approve payroll, and communicate maintenance issues to engineering. Assist in catering sales and cafeteria operations. This role requires long hours, M.O.D. coverage, and adherence to Highgate Hotel standards.
Required Qualifications
- A 2-year, 3-year or 4-year culinary degree
- at least 4 years of progressive experience in a hotel or a related field
- Previous supervisor responsibility
- knowledge of F&B preparation techniques
- health department rules and regulations
- liquor laws and regulations
- ability to effectively communicate both verbally and written
- ability to listen to, understand, and clarify concerns raised by employees and guests
- ability to multitask and prioritize departmental functions to meet deadlines
- ability to handle problems, including anticipating, preventing, identifying and solving problems as necessary
- ability to understand and evaluate complex information, data, etc. from various sources to meet appropriate objectives
- ability to maintain confidentiality of information
- ability to exert up to 50 pounds of force occasionally, and/or 20 pounds of force frequently or constantly to lift, carry, push, pull or otherwise move objects
- ability to maintain regular attendance in compliance with Highgate Hotel Standards
- ability to comply with Highgate Hotel Standards and regulations to encourage safe and efficient hotel operations
- ability to approach all encounters with guests and employees in an attentive, friendly, courteous and service-oriented manner
- ability to maintain high standards of personal appearance and grooming, which include wearing nametags
- ability to attend all hotel required meetings and trainings
- ability to participate in M.O.D. coverage as required
