Job Summary
Provide strategic and operational leadership for all culinary operations at Sorellina by Giada, ensuring consistent execution of recipes, menus, and brand expectations. Manage financial performance by overseeing budgets, food costs, labor goals, and profit-and-loss statements while implementing corrective actions for operational gaps. Direct back-of-house production, quality control, and inventory practices, maintaining compliance with health codes, sanitation standards, and the Collective Bargaining Agreement. Recruit, train, and develop a diverse culinary team, including the Executive Sous Chef, while fostering an inclusive kitchen culture. Partner with the General Manager to deliver elevated guest experiences and collaborate with brand representatives on menu activations. Maintain accurate records and respond to guest feedback regarding food quality. Requires ServSafe certification, seven years of progressive culinary experience, and ability to work flexible schedules including evenings and weekends.
Required Qualifications
- High school diploma or equivalent
- Minimum of seven years of progressive culinary experience
- at least three years as an Executive Chef or senior culinary leader
- Advanced knowledge of Italian cuisine, contemporary culinary techniques, menu development, and premium ingredients
- Demonstrated experience managing food costs, labor, inventory, purchasing, budgets, and profit-and-loss performance
- Proven ability to recruit, lead, develop, and retain high-performing culinary teams
- Strong knowledge of food safety, sanitation, allergen awareness, and applicable health regulations
- ServSafe Manager certification
- Ability to obtain and maintain all licenses, permits, certifications, and registrations required for the position
- Ability to understand and communicate effectively in English
- Ability to work a flexible schedule, including evenings, weekends, holidays, and extended hours
Desired Qualifications
- Degree or certification in Culinary Arts, Hospitality Management, or a related field
- Previous experience in a high-volume, upscale, luxury, celebrity-chef, or fine-dining restaurant
- Experience working in a casino, resort, hotel, entertainment, or union environment
