Job Summary
Lead a high-performing culinary team at Michael Mina inside Bellagio, driving execution of world-class dining experiences. Own daily kitchen operations, fiscal budgets and labor productivity, scheduling, inventory control, guest service standards, and development/implementation of menu strategies to achieve short- and long-term profitability. Represent the kitchens in divisional, property or corporate meetings. Ensure compliance with health, sanitation, and company policies; oversee training programs, HR responsibilities, and coaching to foster a diverse, high-performing team. Collaborate with divisional Directors and kitchen teams to ensure seamless product delivery, time standards, recipe specifications, and quality across high-volume luxury hospitality environments.
Required Qualifications
- Bachelor's Degree or relevant experience in a related field
- 2+ years of prior relevant experience working in a culinary environment as a Chef
- Previous experience managing employees under a collective bargaining agreement preferred
