Job Summary

Coordinate and supervise all phases of kitchen operations, food production, and the Stewarding Department while enforcing sanitation laws and SOPs. Direct chefs and assistants in menu creation, portion control, and recipe standards to maximize guest satisfaction and minimize food and labor costs. Monitor daily forecasts, manage inventory par levels, and oversee loss prevention initiatives across all outlets. Conduct staff performance reviews, approve weekly payroll, and respond promptly to guest complaints and maintenance issues. Ensure compliance with corporate promotions, health regulations, and local liquor laws while maintaining high-quality service standards.

Required Qualifications

  • A 2-year, 3-year or 4-year culinary degree
  • At least 5 years of progressive experience in a hotel or a related field
  • At least 2 - 3 years of previous supervisor responsibility
  • Knowledge of F&B preparation techniques
  • Knowledge of health department rules and regulations
  • Knowledge of liquor laws and regulations
  • Ability to effectively communicate both verbally and written, with all level of employees and guests in an attentive, friendly, courteous and service oriented manner
  • Ability to effectively listen to, understand, and clarify concerns raised by employees and guests
  • Ability to multitask and prioritize departmental functions to meet deadlines
  • Ability to approach all encounters with guests and employees in an attentive, friendly, courteous and service-oriented manner
  • Ability to maintain regular attendance in compliance with Highgate Hotel Standards
  • Ability to maintain high standards of personal appearance and grooming, which include wearing nametags
  • Ability to comply with Highgate Hotel Standards and regulations to encourage safe and efficient hotel operations
  • Ability to maximize efforts towards productivity, identify problem areas and assist in implementing solutions
  • Ability to be effective in handling problems, including anticipating, preventing, identifying and solving problems as necessary
  • Ability to understand and evaluate complex information, data, etc. from various sources to meet appropriate objectives
  • Ability to maintain confidentiality of information
  • Ability to attend all hotel required meetings and trainings
  • Ability to participate in M.O.D. coverage as required
