Job Summary
Executive Chef at Lago Glenview is responsible for the overall leadership, management, and success of Lago's culinary operations, overseeing back-of-house functions including menu development, food quality, kitchen team leadership, inventory management, and cost controls. The role requires developing innovative, seasonally driven menus that reflect Lago’s authentic Italian cuisine and hospitality standards, enforcing portion sizes and presentation guidelines, managing budgets and labor efficiency, ensuring compliance with food safety and sanitation regulations, and fostering a positive, high-performing kitchen culture. The candidate will lead line cooks, prep cooks, pastry staff, and dishwashers; hire, train, and mentor staff; collaborate with restaurant leadership on financial planning; and uphold Lago’s values in all operations. The position demands strong leadership, communication, and culinary creativity, with a track record in delivering exceptional dining experiences in high-pressure environments.
Required Qualifications
- 7–10 years of progressive culinary experience
- 5+ years in a leadership/executive chef role
- Culinary degree or equivalent professional training (preferred)
- Strong financial acumen with budgeting, food costs, and labor efficiency
- Experience in fine dining and/or high-volume operations
- Experience leading and mentoring kitchen staff
- Certification from the American Culinary Federation (CEC or higher)
- Strong interpersonal and communication skills across FOH and BOH
- Ability to work long hours and stand for extended periods
