Job Summary
Executive Chef for Dollywood’s HeartSong Lodge & Resort leading culinary operations with oversight of a $10M revenue business and 26,000 sq ft of event space. Responsible for menu concept and development, coordinating kitchen production, maintaining quality and safety standards, optimizing guest satisfaction (driven by Net Promoter Score), and managing the culinary P&L. Collaborates with Area Executive Chef, procurement, vendors, and cross-functional teams; ensures staff training and development, accurate forecasting, scheduling, and compliance with safety, sanitation, and company policies. Requires strong leadership, relationship-building, strategic menu engineering, and the ability to guide a large BOH team in a high-volume, resort environment. Certification in ServSafe and Allertrain is preferred/required, with flexibility for background screening and operating company vehicles as needed.
Required Qualifications
- Five (5) years of successful employment experience as Executive Chef or Executive Sous Chef in a high-volume, high-end resort/hotel of 200+ rooms with multiple outlets and banquet/catering space
- Two (2) or more years as banquet chef in medium to high volume high-end resort property
- Six (6) years of high volume culinary supervisory experience of more than 30 BOH staff
- Bachelors or Associates Culinary degree or ACF certification is highly preferred
- Valid ServSafe Food Protection Manager and Allertrain Allergen Awareness Certification is required or ability to obtain
- Computer proficiency with Microsoft Office Suite
- Must be at least 21 years of age
- Diverse F&B inventory management software knowledge highly preferred
- Background check and motor vehicle record clearable
