Job Summary
Executive Chef leads daily kitchen operations at Avenue Cafe in MGM Grand Las Vegas, overseeing budgets, labor productivity, scheduling, inventory control, guest service standards, and development and execution of menu strategies to drive profitability. Represents the kitchens in meetings, ensures compliance with health and safety standards, and leads HR-related activities including coaching, performance feedback, and hiring within a diverse, unionized environment. Collaborates with divisional directors and kitchen teams to ensure seamless product delivery, maintains knowledge of property F&B offerings, and drives training and development programs for staff.
Required Qualifications
- Bachelor's Degree or relevant experience in culinary field
- 2+ years of prior relevant experience leading in a culinary environment
- Previous experience managing employees under a collective bargaining agreement preferred
- Previous experience in banquet kitchen or high-volume luxury dining preferred
