Job Summary
Prepare ingredients including marinating chicken, chopping produce, portioning proteins, and preparing salsas according to El Pollo Loco’s recipes and prep procedures. Follow approved recipes, prep lists, and portion controls; label, date, store, and rotate food items using FIFO. Maintain clean, organized prep areas and assist with grill support during high-volume periods. Adhere to food safety and sanitation standards, prevent cross-contamination, and communicate shortages or quality concerns to management. Work collaboratively with cooks and grill staff in a fast-paced restaurant kitchen, following direction from managers and shift leaders. The role requires standing and walking for extended periods, with lifting up to 75 lbs occasionally, and varying schedules including mornings, nights, weekends, and holidays.
Required Qualifications
- Previous food prep or kitchen experience preferred but not required.
