Prepare ingredients and marinate chicken, chop produce, portion proteins, and assemble salsas according to El Pollo Loco recipes and prep procedures. Follow approved recipes, prep lists, labels, dates, and FIFO guidelines; assist with basic cooking or grill support; maintain clean prep areas and equipment; monitor stock levels and report shortages or quality concerns; ensure compliance with food safety, sanitation, and health regulations; work collaboratively with cooks and shift leaders; adapt to a fast-paced restaurant kitchen with variable schedules including mornings, nights, weekends, and holidays.
