Job Summary
Prep Cook responsible for preparing ingredients, marinating chicken, chopping produce, portioning proteins, and preparing salsas according to El Pollo Loco recipes; prep procedures and food safety standards. Supports kitchen efficiency and consistency, ensuring ingredients are ready for grilling and service. Follow approved recipes, prep lists, and portion controls; label, date, store, and rotate food items using FIFO. Assist with basic cooking or grill support tasks; maintain clean prep areas, coolers, and storage spaces; follow food safety, sanitation, and health department regulations; prevent cross-contamination; work collaboratively with cooks and grill staff; adapt to high-volume periods; follow directions from managers and shift leaders; demonstrate dependability and professionalism. Physical duties include standing, bending, lifting up to 75 lbs with team-lift support, and working in a fast-paced restaurant kitchen with variable schedules (mornings, nights, weekends, holidays).
